... Pasta... and more contractions!
Dinner was really quite good, so I wanted to share the recipe. Abbie loved it and even "helped" me with the preparation. And the beauty of this dish is that the leftovers can be dumped in a dish and baked (with some more cheese) as a new meal for another night!
Ingredients:
1 eggplant, chopped in 1 inch cubes
1lb italian sausage
28oz canned tomatoes
2 cloves garlic, diced
basil
salt and pepper
crushed red pepper (optional)
1 tbsp balsamic vinegar
olive oil
1lb pasta (I used ziti)
8 oz fresh mozzarella, cubed
grated parmesan for topping
Saute the sausage until cooked through and set aside. In the same pan, add 4-5 tbsp olive oil and saute the eggplant. Be sure to stir as soon as they hit the pan so they are coated evenly with the oil. Cook 7-8 minutes, then add the garlic and vinegar and stir. Add tomatoes, basil to taste (I used a lot), salt and pepper to taste. Add crushed red pepper, if using. Let the sauce simmer 15 minutes while you cook the pasta. When done, save a little cooking water, add the pasta back and toss with some olive oil. Pour sauce over pasta, add mozzarella and stir. Top with parmesan.
About the contractions... they've been a bit more intense recently, and just when I think things are settling down, they seem to pick back up again. They were kind enough to chill out while I folded laundry and cooked dinner, but just as I got up from the table, hoping to take Abbie out on her bike, they returned and are not letting me go. So, I'm sitting here writing instead, while Abbie climbs all over me.
My body is definitely giving me signs that things are getting ready to progress, but there's no telling how long that'll take. Could be days, weeks, or a month! Only time will tell...

Definitely going to try that recipe - looks delicious! I know it's easier said than done, but try to get some rest - for yourself and the baby! Good luck with everything :)
