Step aside, Bojangles!

For a fun breakfast project on Sunday, Abbie and I made berry biscuits inspired by the famous Bojangles Bo-Berry Biscuit.  If you don't live in the south, you just don't know what you're missing!  They're delicious.  When I was pregnant with Abbie, I craved them and occasionally even left for work early enough to swing by a Bojangles for some of that deliciousness.
Lucky us, we've found a fantastic substitute for those special occasions when a sweet biscuit is what the morning needs.  In fact, I think they're better!


Biscuits:

2 cups flour
1 cup milk
1/3 cup sugar
5 Tbsp butter (frozen)
4 tsp baking powder
1 tsp salt
3 oz (or more!) fresh or frozen berries (I used frozen blueberries and raspberries)

Glaze:

2 cups powdered sugar
1 Tbsp vanilla (I used a little less)
1/3 cup milk (I used a little more to thin the icing)

Preheat over to 450F.  Combine dry ingredients and sift.  Mix in the milk.  As it's starting to come together, use a cheese grater to grate the butter evenly into the mixture.  Fold in berries.  Scoop generous chunks of dough and gently pat into biscuit shape and place on baking sheet.  Bake 7-12 minutes, until golden.  Transfer to serving plate and top with glaze.
