A Quickie and Some Sweetness

Here's one of our favorite quick week-night meals... Simply Asia noodles. They come with the sauce in the box, and you can add whatever you want to it. The noodles take only 6 minutes to cook, and you can easily stir-fry some chicken and/or veggies in that time. (Short-cut: buy pre-sliced, frozen bell peppers to save time washing and slicing!) They make a variety of sauces like sesame teriyaki, spicy kung pao, and roasted peanut. Check out their website or find them in your grocery's international aisle!



On a sweeter note, try out these delicious cookies when you're having a craving or entertaining...

Choc-Oat-Chip Cookies
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups packed brown sugar
1 cup (2 sticks) butter or margarine, softened
1/2 cup sugar
2 large eggs
2 tablespoons milk
2 teaspoons vanilla extract
2 1/2 cups quick or old-fashioned oats (I prefer quick)
2 cups (12 oz) Nestle Toll-House Semi-Sweet Chocolate Morsels

Preheat Oven to 375. Beat brown sugar, butter and granulated sugar until creamy. Beat in eggs, milk and vanilla extract. Add salt and baking soda, and gradually add in flour. Stir in oats and morsels. Bake for 9-10 minutes.

White Chocolate Cookies
1 cup (2 sticks) butter, softened
3/4 cup sugar
3/4 cup brown sugar
1 teaspoon vanilla
2 large eggs
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
6 oz. Baker's White Chocolate (coarsely chopped)

Preheat oven to 375. Beat butter, sugar and vanilla until creamy. Add the eggs and beat well. Gradually add in flour, baking soda and salt. Stir in white chocolate chunks. Bake for 8-10 minutes.
For extra sinfulness, try adding macadamia nuts or cashew nuts! (Leave out the salt in the recipe if using salted nuts.)
